Great Recipe

My son made this chicken sandwich last week.  He got the recipe in a knock-off cookbook.  It must be a sandwich at some restaurant but I’ve never had it.  Anyway, it’s wonderful!  I don’t have the book so I made it from memory.  Here’s how it goes.

Teriyaki Pinapple Chicken Sandwiches

Serves 4

  • 4 boneless skinless chicken breasts
  • 1/8 cup teriyaki sauce (estimated)
  • 4 slices of swiss cheese (low-cal version would be good to skinny this down)
  • fresh pineapple slices
  • buns

Pound down the chicken breasts to be thinner since they are going to be sandwiches.  Place breasts in a ziploc bag and add the teriyaki sauce to marinade.  Marinade in the refrigerator for 30 minutes.  Grill the chicken breasts until done.  Since you flattened then, they won’t take as long to cook.  In the last few minutes of cooking, add the cheese to the chicken and  put the pineapple slices and buns on the grill.  The pineapple slices go on the sandwich when you eat them. Or you can eat them alone – they are free points in Weight Watchers – even grilled.

So simple and so fantastic!  Weight Watchers points?  Three (3) for the chicken, less than one for the teriyaki since I used so little.  I didn’t count any points.  🙂  Two (2) points for the swiss cheese.  If you use the light swiss, it’s only one (1) point.  Three (3) points for the bun.  My sandwich was 8 points.  It didn’t need any sauces at all.  I served it with sweet potatoes (another 3 points).  It ended up being an 11 point meal which is about average for a supper. Serve it with vegies and/or a salad for a lower point meal.

My husband and kids liked it a lot.  DJ didn’t have the pineapple on his sandwich but Gianna did.  I should have made two sandwiches for Dan!  Next time I’m cooking the whole pineapple on the grill.  It was that good!
